Guacamole can either be really good or really bad. I don’t think there’s any “between”. It’s been ages since I’ve had it, and I honestly couldn’t remember what it tasted like until I made some today. My grandma (whom I admire and love dearly) used to take us out to this wonderful Mexican restaurant which ceases to exist, and they had the best guacamole. But then as I got older, I remember going to a different Mexican joint and the guacamole was flat out bad so I never ate it again. Fast forward a few years, okay fine, a decade, and the pictures on Instagram have had me drooling. guacamole

Last summer, I made a cucumber, tomato salad with avocado and cilantro. It looked amazing in the picture but it tasted awful, and I had trouble breathing. I’m pretty sure the breathing difficulties were related to the cilantro due to my asthma and allergies. I’ve never stopped looking at all those avocados, though. It seems they look better with each passing day, so I decided to make guacamole.

Easy Guacamole Recipe

Considering I’ve not eaten avocado in ages and have a hectic life with four kids and two dogs, I’m looking for easy outs anywhere I can find them. There are a ton of recipes on Google, which can be a bad thing believe it or not, but I found one that looked simple. And then I modified it, because I’m like that. To me, if a recipe won’t taste good according to my taste buds, I’m not going to spend my time making it. I find that I tweak a lot of my recipes to my liking. Hopefully, you like them to. 😂

My homemade guacamole had a zesty, vibrant tastiness that hubby and I both loved. In fact, we (playfully) fought over who was going to eat the last of it. We compromised. I left the rest for him to enjoy and promised to make more tomorrow.

2 avocados
3/4 tsp kosher salt
1 1/2 tbsp lime juice
2 tbsp fresh cilantro
2 slices of red onion
Pepper to tasteguacamole
