Cucumber salad has to be one of my favorite summer sides. It goes great with BBQ and I love it during the holidays. My mother-in-law always made it because I didn’t know how. I know, I should have, but I didn’t. My mother was never a cook (not that this requires cooking), and she did weird stuff like make meatloaf in the microwave. She also made cakes in the microwave, and well, pretty much everything that required heat to cook. Like I say, I’m no Rachael Ray, but I do have basic culinary skills (thank sweet Jesus for Google!).
First, A Hillarious Story About Cucumber Salad!
Once upon a time ago, my husband and I packed up the kids to go to my mother-in-law’s for a BBQ. It was the 4th of July and my father-in-law had terminal cancer. We were trying to spend every holiday with him that we could and what better to do than hang out on the 4th with some cool fireworks?
Well, I’d decided that my mother-in-law is always making cucumber salad for me so I was going to make it for her. How hard can it be? It’s cucumbers, onions, and tomatoes in vinegar and water, right? Umm, sort of. At least, that’s how I made it. Notice anything missing out of that list?
My mother-in-law did!
Yeah, so I might have missed one ingredient.
What did I do wrong?
It was SUPER sour. Like, holy crap, Batman! I forgot a major ingredient besides cucumbers.
Unfortunately, for her, she was the first one to taste it. I eagerly watched her scoop some onto her plate, stab a couple of slices of cucumber with her fork and raise it to her mouth, and then she made the most awful face I’ve ever seen her make. Yes, even to this day, that was the worst I’d ever seen her sour face and I’ve known this woman for almost a decade and a half.
Poor thing, she couldn’t spit it out fast enough. I was standing before her, baffled as to why she didn’t like my cucumber salad. After spitting into a napkin and drinking and getting the taste out of her mouth, I asked her, “What’s wrong? You don’t like it?” 😂
She shook her head no and said, “Oh, man! Didn’t you put any sugar in it?”
Umm, what? I didn’t know there was sugar in it! I’ve always thought cucumbers tasted sweet so it never occurred to me that you’d put sugar in the mix. I told her no, I didn’t know. We ended up throwing it all out.
What’s the damage?
Everything in it is pretty healthy, but there are still some calories and carbs from the veggies. The entire recipe makes about 5 cups. One serving is 1 Cup, and here’s the minimal damage caused by this delicious mess of goodness:
- Protein- ~1g
- Carbs- ~4g (Net)
